Okay, so according to Bulbapedia so far, this does not appear to be the start of Generation VIII. It could change; I don't know. But according to Serebii, there WILL be more core series games coming, with the first (batch) of them due for release on the Switch in 2019. I reckon THOSE will be the Gen VIII games. Also, here's some more info Serebii has for us: "These games are Pokemon Let's Go Pikachu and Pokemon Let's Go Eevee and are set in the original Kanto Region as a remake of Pokemon Yellow in the first new release in the region since 2009's HeartGold & SoulSilver. These games feature co-op locally as well as a new device like a Poke Ball called the Poke Ball Plus that lets you take your Pokemon around with you in Pokemon GO and be used as a GO Plus. You can also send your Pokemon from GO to Pokemon GO Park to get them in Pokemon Let's Go Pikachu & Eevee. They can be played with just one Joy-Con and capture is done by flicking the Joy-Con like Pokemon GO. Both the trainer and your partner Pikachu and Eevee can be customized. It is out November 16th."- It's confirmed that the game only features the first 151 Pokemon and some Alolan Pokemon.
- It's confirmed that there are no wild Pokemon battles, just the capture.
- It will contain a Pokemon that has never been seen before. This is the Pokemon referenced in the trailer and sent to Pokemon GO.
- The controls for catching Pokemon in handheld mode will have you moving the console using the gyro with no touch control.
Now, time for a little speculation about a certain tidbit of the recent news. I HIGHLY suspect the new Pokemon is going to be a new Eeveelution that will be initially exclusive for the Let's Go Eevee version.
I don't know if the mascot Pokemon will evolve either as an option for the player or because of the story, but either way, if so, it would be a strange move since Pikachu's game would only have one evolution whilst Eevee's game will hypothetically present a multitude of choices for the player. Logically, such a feature would make players prefer one game over the other.
Now, the developers could have Eevee evolve into only one existing Eeveelution in the game. But at this point, they're all dated (arguably even the somewhat recent Sylveon) and it would make more sense from a marketing standpoint to introduce a new Eeveelution here. Pikachu's already so popular as the franchise mascot, so there was no need to give it anything new to up the appeal factor for its version.
And let's not forget that there's already been some bits of evidence presented to us before these games were announced. I'll just point you to this video right here:
Plus there's the fact that Lisa, one of the main characters for the upcoming Pokemon movie, has an Eevee and, if you've been paying attention, the trailers and character bios have pretty much indicated that their story arc will involve them developing a bond. Of course, it could mean nothing in the end, but it should be noted that whenever an Eevee plays a major role, an evolution is usually guaranteed. And since these games are just a few months shy of this movie's release, it would make sense for them to tease a new Eeveelution in the new movie.
This is what I believe is going to be the new Pokémon. I STRONGLY believe that's the case. If this doesn't turn out to be true, well, that's fine too. But with the evidence I just provided, it'd be a mighty big coincidence if my suspicious turn out to be disproved. As for my thoughts on these games, they actually look pretty cool. Moreover, I'm glad Eevee is a mascot for one of these games; it and the Eeveelutions have recently become members of my list of favorite Pokemon and I do feel they haven't gotten much attention that is beyond the gimmick of multiple evolutions.

I think for the anime for the games, the writers should make Ash a tutor for the playable characters. Let's say they're big fans of Ash and after seeing him win the Alola League, they want to have him tutor them to become Pokemon trainers.

I doubt Sun and Moon will even be over before or shortly after these games come out. It probably won’t end until next year, prior to when the Gen 8 games come out. These games really don’t seem to warrant their own anime series, given that they’re just remakes.

They’re already hinting at Necrozma and we still have some more stuff with Poni Island and Ula’Ula Island. I can see them drawing everything out until the end of summer 2019, or the beginning of fall 2019.
