lol wow there's a lot of those to choose from so it's hard to pick, but I suppose I'd have to say when they helped Ash get into the Celadon Gym back in season one by disguising him as a girl...

once again, that's hard, mainly because there're a lot of good episodes, but I would probably have to say it's a three-way tie between the episode where Ash and May tie for a contest ribbon during Battle Frontier, the episode where Ash defeats Paul, and the episode where May returns during Diamond and Pearl, since all three are pretty boss...
