Actually, Red didn't catch some other Pokémon. He had a Jolteon, which means he didn't have Eevee's other evolutions. Also, there were quite a few other Pokémon we never saw him catch.

Nope, he catches all of them but Mew

Check one of the last pictures for episode 4. It says Pokemon Caught: 150 in Japanese. And then Mew is seen afterwards.

Well at the end he had all 8 badges and 150 of 151 pokemon

Just gotta read between the lines. There's about a 10% chance I'm wrong though.

Exactly. That leads to believe he gets Eevee later to evolve into an Espeon(I'm saying he gets another... another... another Eevee xD)

And it could explain how a Pokemon becomes shiny despite Genetics? I mean you also saw him breathe blue fire. I don't think that is a regular shiny...
